What is better than a bag of Maltesers on their own…..?? A bag of Maltesers inside a batch of cookies. Here is a delicious recipe that will have everyone coming back for seconds!
These cookies have a delightful chewy texture that combines well with the crunch of the Maltesers. The recipe makes around 30 moderate sized cookies and they will keep for quite a while in an air tight container (not that they will last more than a day though)
Prep Time: 20 minutes Cooking Time 12-15 minutes (tip: don’t over cook them otherwise they will become hard)
- 250g unsalted butter, softened
- 1/3 cup white sugar
- 1/3 cup brown sugar, firmly packed
- 1/2 cup condensed milk
- 2 tsp vanilla essence
- 165g Maltesers, roughly chopped
- 2 cups self raising flour, sifted
- 1/2 cup plain flour, sifted
Preheat oven to 180C. Line baking trays with baking paper. Beat butter and sugars in a large bowl with an electric mixer until pale. Add condensed milk and vanilla and beat for a further 1 minute. Add Maltesers and flours. Stir with a large spoon until well combined.
Roll mixture into balls and place onto prepared baking trays, allowing room for cookies to spread. Gently press cookies with the back of a spoon to flatten slightly. If you bake them with 2 trays in the oven at the same time, remember to swap the trays half way through.
Stand for 5 minutes before transferring to a wire rack to cool.
Best served warm with a glass of cold milk. Enjoy!!
