
Who doesn’t love crumbed chicken?? This recipe is a fun way to bring a twist to an old favourite !
I don’t really eat cereal but when I have seen several recipes in the past using cornflakes to supplement breadcrumbs so I thought I would finally try it out.
This is such a fun way to crumb your meat, it’s chunkier and crunchier than breadcrumbs.
The cornflakes get a beautiful golden colour to them and when you bite into the chicken you get that crunch we all love. The combination of the Parmesan cheese and the simple childhood favourite cereal is one you will want to make again and again.
This recipe has become a fast favourite in our house and is super quick and easy to whip up. I just serve mine with veggies or salad on the side.
Ingredients:
2 cups cornflakes
1/3 cup shredded Parmesan cheese
2 tablespoons olive oil
1 tablespoon lemon pepper seasoning
1/3 cup natural plain yoghurt
1 1/4 Pounds chicken tenders
Method:
Preheat oven to 450 F or 230 C
In a bowl crush cornflakes until fine (some chunks still ok)
Add Parmesan and olive oil to cornflakes and mix well
In another bowl mix yoghurt and lemon pepper seasoning
Coat chicken in yoghurt mixture and then coat in cornflake mixture
Place chicken tenders on lined baking tray
Bake for approx 15 minutes or until golden brown. Turn chicken half way through cooking.
