This is such a great recipe if you’re having people over for lunch or even for work lunches as you can prepare on the weekend and then just cut up when you’re ready to eat!
This is super easy to make if you need something to put on the table quickly. It’s great served on its on or with some salad. I personally like to have mine warm but cold
This is also a perfect recipe if you want to sneak some veggies into the kids diet. It’s so tasty they will never know!
Once cooked you can store in the fridge for a few days and it will keep just fine.
10 small potatoes – diced
1 bunch spinach – roughly chopped
1 cup spring onion – chopped
155 g feta cheese – crumbled
1 cup cheddar cheese – grated
6 eggs – beaten
Salt & Pepper to taste
Extra grated cheddar cheese for topping
Preheat oven to 180 – 200 degrees celsius
Grease baking dish
Boil potatoes until just tender
Steam spinach until cooked
In a bowl combine all ingredients and mix well
Season with salt and pepper as needed
Place all ingredients in baking dish
Garnish with extra grated cheese as little or as much as you like
Bake for 45 minutes – 1 hour or until golden brown.
